Cold oatmeal? Cold oatmeal.

As I referred to in last week's blog post, Sunday nights are (in theory) reserved for me to clean, do laundry and do some meal prep for the week. As of 7 p.m. on Sunday, I've done the smallest amount of all of that to make me feel better about myself. Oh, and write this awesome blog. Which, you should TOTALLY share with your friends if you so feel desired. The meal I struggle with the most is breakfast. Generally I wake up too late, don't want to eat crap, but usually end up in the McDonald's drive thru because it's cheap and easy. Side note: if they want people to start eating better in this country they need to quit making Sausage McMuffins $1. Just saying. Back to the point... It's going to go something like this: "I'm going to eat healthy this week!" "I'm not going to get takeout once!" "I'm going to get up at 6 a.m. to go to the gym!" I tell myself that last one each Sunday night. It's cute that I say it. I also cancelled my gym membership this weekend. Anywhoo..... Sunday night for many of us is our reset button. For me, that means doing some meal planning/cooking for the week. Now, the reason I started this blog was because I can only tolerate so many days of leftovers. Remember a long time ago when I said I was going to start a cooking blog for singles? Yeah, me too. But as I was sitting around my apartment in Nashville (Yes, I moved to Nashville since my last post), I thought to myself, "Why didn't I keep that up?" Reason being, like for so many of us, life got in the way. But not anymore. I'm back. So welcome, one more time, to Table for 1, a cooking blog to show that you can cook for just you and not have leftovers for a week. Because let's be honest, leftovers are good for a day, maybe two, but who wants to eat the same lunch and dinner everyday for a week? Not I. So let's get cooking. On the menu tonight? Ribs. OK, so this is the first post with real food. Here are some things I've learned in this first go round. 1. I need my roommate, Shanna Lockwood, here with me when I do this. It's not for her cooking skills (she will laugh that I even put the words "cooking" and "skills" with her in the same sentence), but I need her to take pretty pictures of my food. For those who don't know, she's an insane photographer ( check out her website ) My cell phone photos aren't very... well good. Hey, I can write. Just the photo thing never caught on. 2. Plating food for pretty pictures is hard. This is where I give a major kudos to the people of "Tasty" (if you haven't watched a Tasty video yet you're missing out) because how they make it look easy and pretty is beyond me. Hopefully practice makes perfect cause this round was a hot mess. 3. Music and cooking for me go together. I love dancing around the kitchen while whipping up meals. So, I...

I didn't grow up in a "cooking" house. My mother will be the first to admit that she's not exactly Martha Stewart or Rachael Ray in the kitchen. In fact, my mother really avoids cooking at all costs. (Sorry mom). So a few years ago when I discovered that I enjoyed cooking, it opened up a whole new world because it was something I just never saw myself enjoying. But I do. So, like all budding cooks, I signed up for Pinterest. I made boards for every recipe and tip I could find. Then I realized the problem: None of these recipes or boards are cooking for one. Hello, my name is Dana, I'm 35 and so single that eHarmony couldn't find a match for me (believe me, we've tried). But back to cooking. Yes, I can "half" the recipes, and many single friends I know do this, but even with halfing recipes, this still leaves leftovers for days. One day of leftovers? Not bad.
