Remember a long time ago when I said I was going to start a cooking blog for singles? Yeah, me too.
But as I was sitting around my apartment in Nashville (Yes, I moved to Nashville since my last post), I thought to myself, "Why didn't I keep that up?"
Reason being, like for so many of us, life got in the way.
But not anymore. I'm back. So welcome, one more time, to Table for 1, a cooking blog to show that you can cook for just you and not have leftovers for a week. Because let's be honest, leftovers are good for a day, maybe two, but who wants to eat the same lunch and dinner everyday for a week?
Not I.
So let's get cooking. On the menu tonight? Ribs.
And before you click off the page because you don't have a grill, well guess what, neither do I. The apartment complex frowns upon it.
So how do you make ribs? Easy. Bust out your trusty crock pot for literally the easiest dinner you'll cook all week.
For me, I can only eat a about a half rack at a time (and that's pushing it) so I actually made this two dinners.
I bought a rack of ribs at Kroger, cut it in half, put one half in the freezer and prepped the other for cooking. I kept the frozen half in the freezer for a week and it still tasted great. Also, this made me feel a little better at the price tag that it was going to be two dinners instead of one.
This recipe might be the easiest thing I'll ever write about.
Boom. Dinner. I made some baked beans and a baked potato to go with it.
Minimal prep. Minimal skill. Minimal price. Satisfying dinner for one.

- Take the thawed rack of ribs and cover the meaty portion evenly with brown sugar
- Sprinkle salt and pepper to taste over the ribs
- Take your favorite BBQ sauce (Sweet Baby Ray's Honey Chipotle for me) and cover the top of the half rack with sauce.
- Set your timer to low for 4 hours.
