It's Sunday night, which for many of us means we are going to have an internal conversation with ourselves. It's going to go something like this:
"I'm going to eat healthy this week!"
"I'm not going to get takeout once!"
"I'm going to get up at 6 a.m. to go to the gym!"
I tell myself that last one each Sunday night. It's cute that I say it. I also cancelled my gym membership this weekend.
Anywhoo.....
Sunday night for many of us is our reset button. For me, that means doing some meal planning/cooking for the week.
Now, the reason I started this blog was because I can only tolerate so many days of leftovers. Eating the same thing three days in a row is a bit over my limit.
Except when it comes to pinwheels. Cause let's be real, who doesn't love pinwheels?
You know what I'm talking about: those little wraps that you graze at parties or cookouts and you don't feel guilty because they are so small.
Well, they are also great for a few days of lunches. And they are one of the few things I can make on Sundays, have for the week, and not get sick of eating by Wednesday.
Turkey Ranch Pinwheels
I've taken a few cooking liberties with this recipe, but I got the base idea from, you guessed it, Pinterest. The original recipe came from The Pinning Mama.
Ingredients:
- 6 medium size soft shells (Good excuse to buy them and also have the leftover shells for Taco Tuesday!)
- One package of turkey breast
- 1 8 oz package of cream cheese, softened (I use fat free)
- 1/4 cup shredded cheddar
- 1/2 green pepper, finely chopped
- 1 tbs dry ranch
- Garlic salt to taste (optional)
Steps:
1. Mix the cream cheese, cheddar, chopped pepper and dry ranch together in a small mixing bowl. Mix until all combined and would be easy to spread over tortillas.
Now, the optional garlic salt, this one is totally up to you. I added it on a whim one time because the recipe resembled the cheese ball recipe that I make for parties (teaser, that one is coming around the holidays). So I added a few shakes and I loved it. But in no way, shape or form do you have to. I've had this recipe with and without and both are delicious.
2. Take one of your shells and lay it out. Because I choose to use the smaller shells (cause again, tacos), I don't use what the original recipe called for. I don't even use a certain measurement. I just take some of the mixture and spread it evenly around my shell. Now that I've made it a few times, I get it down to where the mixture will cover six shells, with a little to spare.
Now, you can use the bigger shells. No shame in that game.
3. If you are using the smaller shells, take two pieces of turkey and lay them down on top of the spread. If you choose to use bigger shells, add an extra slice of turkey or two.
4. Roll the tortilla shell up gently, but tightly, to make sure it holds and keeps the shape. Don't worry if some of the turkey pops out at the end. After rolled up, I tend to roll it back and forth a few times to make sure that it's nice and tight.
5. Now, this is an important step that I bypassed the first time I made these and will never do it again. When you get ready to cut the shells, make sure to use a serrated knife. If you don't, it will be a pain in the you know what to cut. Cut the wrap into as big or small slices as you want. I generally get 8-10 pinwheels out of each rollup. (I usually keep the ends just to have, but you can toss them as they don't usually have meat or the spread.
Repeat these steps until your mixture is gone.
Now, the best part of it is that your portion size is up to you. Generally, I pack a tortilla and a half for a lunch portion.
There you go. Yummy lunch for a few days this week with minimal work.
