Cold oatmeal? Cold oatmeal.

As I referred to in last week's blog post, Sunday nights are (in theory) reserved for me to clean, do laundry and do some meal prep for the week. As of 7 p.m. on Sunday, I've done the smallest amount of all of that to make me feel better about myself. Oh, and write this awesome blog. Which, you should TOTALLY share with your friends if you so feel desired. The meal I struggle with the most is breakfast. Generally I wake up too late, don't want to eat crap, but usually end up in the McDonald's drive thru because it's cheap and easy. Side note: if they want people to start eating better in this country they need to quit making Sausage McMuffins $1. Just saying. Back to the point... Pinwheels = great lunch idea

It's going to go something like this: "I'm going to eat healthy this week!" "I'm not going to get takeout once!" "I'm going to get up at 6 a.m. to go to the gym!" I tell myself that last one each Sunday night. It's cute that I say it. I also cancelled my gym membership this weekend. Anywhoo..... Sunday night for many of us is our reset button. Remember a long time ago when I said I was going to start a cooking blog for singles? Yeah, me too. But as I was sitting around my apartment in Nashville (Yes, I moved to Nashville since my last post), I thought to myself, "Why didn't I keep that up?" Reason being, like for so many of us, life got in the way. But not anymore. I'm back. So welcome, one more time, to Table for 1, a cooking blog to show that you can cook for just you and not have leftovers for a week. Because let's be honest, leftovers are good for a day, maybe two, but who wants to eat the same lunch and dinner everyday for a week? Not I. So let's get cooking. On the menu tonight? Ribs.
